Fig and date oat bars
These fig and date oat bars are vegan, sugar-free and dairy-free. They can easily be gluten-free too, if appropriate oats are used. So these bars are really healthy treats – particularly for autumnal breakfasts or afternoon snacks.
Ingredients
Method
- Preheat the oven to 180°C and line a baking tin with parchment paper.
- Using a fork, mash the bananas until you get a purée. Mix in the cinnamon, if used.
- Finely chop the figs and add to the bananas together with the dates. Add the raisins and seeds too, then mix in the oil.
- Fold in the oats and mix until you get a thick, gooey batter. Add more oats, if needed. (The batter should be thick, but not dough-like.)
- Transfer the mixture to the prepared tin, spreading it out evenly.
- Bake in the middle of the oven for 20-25 minutes until golden brown.
- Let it cool in the tin for 5 minutes, then transfer it to a wire-rack.
- When cooled, cut them into bars or squares and enjoy!
