Spelt Pizza dough
This pizza base is a healthier version. I used a bread machine to make the dough, but you can easily make it by hand. The dough can be used for pizza, bread rolls or focaccia too.

- If you have a bread machine put all the ingredients into the tin and set the machine to the dough program.
- When the program has ended, remove the dough, then roll out on to an oiled baking pan (rectangular or circular). The rim should be thicker than the middle. Oil the top, cover it with a towel and let it rest for 15 minutes.
- If you don’t have a bread machine : mix yeast, water, sugar, salt. Add oil, mix well. Add flour and stir until a dough has formed. Place the dough in a mixing bowl with a little olive oil, cover with a plate, and let it rise until doubled in size, for about 60 minutes.
- Turn onto a floured flat surface and knead for about 10 minutes. Make 1 or 2 balls, oil them slightly, then rest for 30 minutes in a warm place.
- Roll the ball(s) out into a circle or rectangular shape(s). Oil the top, cover with a towel and let it rise for 15 minutes. You’re ready to put your toppings on.
- Alternatively make rolls, buns, balls, sticks etc. and rest them for 15 minutes before baking.
