Glace cherry and marzipan cupcakes
These glace cherry and marzipan cupcakes are very pretty and tasty too, so they’re the perfect treats for special occasions, celebrations such as Easter, Valentine’s day, Mother’s day, anniversaries or a garden tea-party.

- Preheat the oven to 180°C.
- Put 6-8 cherries aside. Cut the marzipan into small cubes – set aside about a handful for garnish.
- Chop the remaining cherries and mix together with the almond, marzipan pieces and 1 tablespoon flour.
- Beat the butter, sugar and eggs until pale and creamy, then sift the flour gradually whilst stirring.
- Fold in gently the cherry mixture, then spoon the batter into lined muffin tin or silicon case.
- Bake for about 20 minutes until light brown and transfer to a wire rack to cool.
- Mix 2-3 tablespoons of icing sugar is with water to get a single-cream consistency glaze. Spoon this on the top of the cupcakes and let it drip down the sides. Put a glacé cherry on top and stick a few marzipan pieces into the icing.
- Let the icing set before serving.
