Ingredients

  • 500 g lean beef
  • ½ roasted red pepper
  • ½ red onion chopped
  • 2 Tbsp vegetable oil
  • ½ tsp salt
  • 2 Tbsp curry powder
  • 3 cloves garlic minced
  • 2-3 cm piece ginger grated
  • 1 tsp turmeric powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 2 spring onions chopped
  • 2 tsp tomato purée
  • 1 tsp soy sauce

Method

  1. Heat half of the oil in a frying pan and soften the onion. Transfer to a plate to cool.
  2. Heat the remaining oil over medium heat, add the curry powder, grated garlic & ginger, turmeric, coriander, cumin and garam masala. Fry the spices until fragrant for a couple of minutes. Add more oil if the mixture is too dry. Let the spices cool.
  3. In a large bowl combine the meat with the spice mixture then add the onion and pepper and the spring onion & soy sauce. Season with salt and freshly cracked pepper. Cover the mixture and chill for at least an hour, preferably overnight.
  4. Divide the mixture into 4 equal sized portions and form patties between your palms. Brush them with oil, then grill, griddle or barbecue them to your liking.
  5. Rest them for five-ten minute before serving between lightly grilled buns or flat-bread filled with onion/tomato chutney, cucumber, lettuce and a spoonful of raita. Or serve with sweet potatoes and a salad.
