Cauliflower stuffed roti (Cauliflower parata)

Cauliflower parata will definitely be a hit in any party served as a main course. It goes very well with any Indian pickle or just raita. It is very filling and also tastes delicious.

Ingredients
  

  • ½ Caulflower grated
  • ½ tsp Chilli powder Optional
  • 1 tsp Cumin powder
  • 2 tsp Dry mango powder
  • 1 Green chilli chopped
  • A sprig of coriander leaves chopped
  • Salt as required
  • 2 cups whole wheat flour
  • Water as required
  • Oil or clarified butter as required to drizzle
  • ½ tsp Turmeric

Method
 

  1. Mix the grated cauliflower with cumin power, salt to taste , dry mango powder, chilli powder, green chilli (chopped), turmeric and coriander leaves.
  2. Heat the oil in a pan, add the cauliflower mixture to it and fry until all the moisture is gone and until the cauliflower is cooked. Set it aside to cool.
  3. In a bowl, mix the flour, salt and water and knead to a smooth and soft dough.
  4. Divide the dough into medium sized dough balls. Take a dough ball and roll it out just enough to put 2 Tbsps of cauliflower mixture on it. Holding the edges of the rolled out dough, seal the mixture.
  5. Again roll out this sealed dough into a thin round roti.
  6. Heat a pancake pan and put this stuffed parata on it. Fry both side until they are brown but not burnt.
  7. Drizzle it with clarified butter and serve hot.
