Brownies with cherries

These lovely brownies with cherries will go fantastically well with your mid-morning coffee or afternoon tea. They are gluten-free, dairy-free and I’ve reduced the sugar content because cherries are naturally very sweet – so these little treats can be eaten by many people on various diets! Perfect! They also make nice presents!

Ingredients
  

  • 100 g butter or dairy-free spread
  • 100 g dark chocolate at least 70% cocoa
  • 100 g unrefined cane sugar
  • 100 g rice flour or ground almond
  • 1 tsp baking powder
  • 1 tsp almond liqueur or vanilla essence
  • 3 eggs beaten
  • 200 g cherries

Method
 

  1. Preheat the oven to 180ºC, and line a 20 cm square baking tin with baking parchment.
  2. Stone the cherries, then cut the flesh in half.
  3. Gently melt the chocolate and sugar together in a heatproof bowl set over a pan of simmering water. Remove from the heat and add the butter. Mix well until you get a thick, smooth cream.
  4. Add the flour, baking powder and vanilla or liqueur. Stir, then add the eggs gradually. Fold in the cherries gently.
  5. Spoon the mixture into the baking tin and bake for 20–25 minutes. It must not be overcooked because the middle should remain a bit gooey.
  6. Leave the cake to cool in the tin for 5 minutes, then turn it out onto a wire rack. When it’s cooled completely, cut it into squares.
