Spinach, cheese and bean burger

This Italian-style spinach, cheese and bean burger is tasty vegetarian version. It’s super easy to make, perfect for parties or meat-free days. You can make them gluten-free by using rice based “bread-crumbs”, or just use boiled rice.

Ingredients
  

  • 250 g baby spinach
  • 1 Tbsp olive oil
  • 2 leeks white part only
  • 1 can 400g of white beans(e.g. cannellini)
  • 4 Tbsp chopped dried tomatoes in oil
  • 30 g breadcrumbs
  • 50 g grated hard cheese
  • 1 egg

Method
 

  1. Put the spinach in a sieve then pour boiling water over it. When cooled, squeeze the water out with your hands, then chop finely.
  2. Drain the beans and coarsely mash with a fork.
  3. Thinly slice the leeks, then gently cook in the oil until soft. Let it cool.
  4. Combine everything together in a large bowl, season to taste with salt and pepper. Mix well.
  5. Form 4 large or 6 small balls from the mixture. Press these slightly between your palms – then put them on a plate and rest in the refrigerator – for about 15-20 minutes – if time allows.
  6. Pan-fry the patties in hot oil on each side until golden brown (about 3 minutes) – or put them under the grill in the oven, turning over once.
  7. Serve them in a bun or wrap with salad and condiments.
