Spiced apple and dried fruits chutney

This spiced apple and dried fruits chutney is cooked with port, so it’s perfect during the winter festivities. Serve it with cheese, cold meats or on party nibbles, appetizers or even with your Christmas roast. It also can make an excellent present for friends and family.

Ingredients
  

  • 750 g mixed dried fruit figs, apricots, plums
  • 500 g apple
  • 750 g red onion
  • 1 star anise
  • 6 green cardamon
  • 1 cinnamon stick
  • 400 ml apple juice
  • 400 g light unrefined soft sugar
  • 1 tsp sea salt
  • 150 m red port

Method
 

  1. Peel the onions, then slice them thinly. Peel & core the apples, then dice into 1 cm cubes. Chop the dried fruits.
  2. Wrap the star anise and cardamon in a piece of muslin, then tie it with some cotton thread.
  3. Put all ingredients (except the port) in a large, heavy-based pan. Bring to the boil, then cook for 90 minutes, over low heat and under cover.
  4. Stir in the port, then cook uncovered for another 60 minutes until you get a thick jam, stirring occasionally. It’s ready when the fruits are surrounded by a thick, sticky syrup.
  5. Discard the spice-bag, then spoon the chutney into sterilized jars. When cooled, store the jars in a larder or fridge.
