Brussels sprout mash with chestnuts

Brussels sprouts and bacon go very well together –  add some chestnuts and you get something truly special that fits perfectly in a celebratory menu. Serve it as a side dish to your Christmas roast, Sunday roast, or with game. It’s super easy to make and ready in no time.

Ingredients
  

  • 250 g Brussels sprouts
  • 300 ml chicken stock
  • 100 g smoked bacon or lardons
  • 2 spring onions or 1 shallot
  • 70 g roasted or cooked chestnuts

Method
 

  1. Dice the bacon, finely chop the onion. Finely chop the chestnuts.
  2. Clean the sprouts and cook them in the chicken stock until tender. Drain, but reserve the stock.
  3. Put the sprouts into a blender. Add about half a glass of the stock. Process, add more stock until you get a thick, coarse mash. Cover and set aside.
  4. Fry the onion and the bacon in little oil, until the bacon is crispy and the onion is soft. Add the chestnuts, stir-fry for about a minute.
  5. Add the sprout mash, combine well.
  6. Season to taste and serve.
