Ham and peas pasta
You can make fantastically easy meals with leftover cooked or roasted ham/gammon other than just sandwiches. This ham and peas pasta is a perfect example – it’s ready within 15 minutes and tastes divine!!! You can spice it up with some added chilli flakes.

Method
- Cook the pasta according to the instructions on the packaging.
- Meanwhile: finely chop the shallot and spring onions.
- Heat about 1 Tbsp of olive oil in a pan. Add the shallot and spring onion slices. Gently sauté for 3 minutes then add the garlic. Cook for 1 more minute then add the wine. Let it bubble for a couple of minutes then add the chicken stock and bring to the boil.
- Add the green beans and peas. Reduce to a simmer and cook for 5 minutes or until the beans are cooked through. Add the ham to warm through then toss with the pasta.
- Serve with the chopped greens of the spring onion and a few mint leaves scattered around and grated Parmesan if liked.
