Turkey breast stir-fry
I found some water chestnuts in the back of the cupboard that I’d forgotten about. They reminded me of a turkey breast stir-fry that I’d made some years ago and had also forgotten about. I’m glad I resurrected it because it’s very quick & easy but subtly delicious.

Method
- Heat the groundnut oil in a hot wok until it smokes then add the turkey strips.
- Stir fry thoroughly for about 5 minutes then remove to a bowl.
- Mix together the garlic, gram flour, paprika, salt and stock in a mixing bowl.
- Reheat the wok, add the sesame oil and when smoking stir-fry the capsicum & broccoli for a couple of minutes. Add the water chestnuts, fry for another minute then add the stock mixture. Bring to the boil and allow to thicken.
- Add the turkey strips and soy sauce, warm through for a couple of minutes.
- Serve with rice or part of a menu.
