Swede and Carrot Soup
I used the pressure cooker for this Swede and Carrot Soup, as I do for most soups, but it’s not essential. Actually this recipe can be the method for almost any combination of vegetables, just use your imagination! As you’ll see it’s incredibly quick and simple to prepare, but it’s wonderfully rich and warming – and not just for adults, the carrot gives it a sweetish flavour which makes it perfect as healthy homemade baby food too!

- Heat the oil in the pressure cooker and cook the onion until softened (7 or 8 minutes) then add the garlic stirring for another couple of minutes.
- Tip in the chopped swede and carrots. Cook for 5 or 6 minutes, stirring frequently to avoid catching.
- Add the stock and bring the cooker up to pressure. Cook for 7 minutes at high pressure or 10 for medium. Allow to cool naturally then use a blender to create a lovely potage. Serve with crusty bread and perhaps some soured cream.
