Soy Sauce Chicken
This super simple soy sauce chicken is from my memory of a TV show some years ago featuring the splendid Ken Hom. I didn’t have a wok at that time but he demonstrated how easy it was to cook in one. I bought one and can’t now imagine kitchen life without it! It only takes 5 minutes to prepare, 20 to marinate and 5 to cook – just right for an easy supper or as a starter in a Chinese dinner party.

- Mix together the marinade ingredients in a bowl. Cut the chicken into bite-size chunks. Stir into the mixture and marinate for at least 20 minutes.
- Put the chicken into a freezer bag (discarding the marinade) and add the cornflour. Squeeze around to coat all the pieces.
- Put the wok on a high flame, add the oil when it’s really hot then turn down to medium/low. Stir fry for 5 minutes then place on kitchen paper to remove excess oil before serving.
