LowCal Miso Vegetable Soup
If you are watching the calories but need something filling, warming and tasty to help you through the winter months then this LowCal Miso Vegetable Soup fits the bill! Celeriac is a wonderful vegetable that’s really popular in France but rather overlooked elsewhere – it has a great flavour and gives real body to this soup but is still only 18kCal/100g. The complete soup as below works out at less than 20kCal/100g. If you’re not using a pressure cooker you’ll need about 25 minutes simmering, stirring regularly.
