Asparagus with crab dip

This dish is ideal for sharing! So if you have friends around for a drink – or you want so spend a romantic evening with your loved one – this asparagus with crab dip could be the perfect appetizer! It takes only 5 minute to make if you’re using precooked & shelled crab-meat. Here I used a ready-cooked whole crab, so had to pick the meat out of  its shell & claws by hand, which was quite fiddly and time-consuming but my young daughter enjoyed helping.

Ingredients
  

  • 100 g crab meat or the meat of 1 large cooked crab
  • 1 bunch of asparagus
  • 2-3 Tbsps crème fraîche
  • Juice and zest of ½ lemon
  • Couple of pinches of cayenne pepper
  • Salt and ground pepper
  • Paprika to garnish

Method
 

  1. Put the crab meat into a bowl.
  2. Add enough crème fraîche to have a creamy consistency. Add the lemon juice and zest.
  3. Season with cayenne, salt and ground pepper. Mix well, taste and adjust the seasoning.
  4. Meanwhile snap off the woody ends of the asparagus. Steam them above boiling water or blanch them until al dente. Drain, then put them on a plate, spoon the crab dip around them. Dust the dip with a pinch of paprika (or cayenne).
