Berry and granola yoghurt pots

I always keep a bag of frozen berries in the freezer – as they are ideal for easy desserts at the weekend, or healthy breakfasts  during the week when I don’t have any fresh berries in the fridge. These berry and granola yoghurt pots are perfect for breakfast and for pudding! You can make this dish in just 5 minutes –  if you want it super-healthy,  do use homemade or good quality, low-sugar granola, full of crunchy, nutritious nuts! I made it with Skyr, which is a super creamy, high-protein yogurt.

Ingredients
  

  • 1 cup of fresh or frozen berries
  • 6 Tbsp natural Greek youghurt or Skyr
  • 6 Tbsp Granola nutty & gluten-free if possible
  • Maple syrup or Honey
  • Few berries to garnish

Method
 

  1. Using a hand-held blender whizz the berries with the yoghurt until you get a light, creamy mixture. Taste it and add some maple syrup or honey to your liking.
  2. Spoon some granola into two tumblers or small pots, then add some berry yoghurt then cover with the remaining granola. Scatter some fresh berries on top and serve.
