Smoked salmon with fennel and radish salad

When you have friends around for a drink or dinner, the recipe of this Smoked salmon, radish and fennel salad could come in very handy. It can be made in just 10 minutes; the salad part can be prepared in advance; and the dish can be served as an appetizer or a starter – with blinis, oatcakes etc. The dish is delicious, delicate and perfect for celebrations, parties and picnics.

Ingredients
  

  • 1 bulb fresh fennel
  • 5 radishes
  • 2 spring onions
  • Juice and grated zest of ½ lemon
  • 1 Tbsp olive oil
  • 1 Tbsp chopped dill
  • salt and freshly ground black pepper
  • 4 slices of smoked salmon

Method
 

  1. Using mandolin or knife, slice the fennel and radishes very thinly. Keep the fennel fronds for garnish. Slice the spring onions too. Put them in a bowl, add the chopped dill, lemon juice and zest, then season with salt. Cover and leave to soften slightly for 10 minutes.
  2. Put the salmon on a serving dish, or divide between plates, and arrange the salad alongside.
  3. Season with ground pepper then squeeze some lemon juice over the salmon.
  4. Garnish with the fronds and serve.
