Cheat’s seafood paella
I love paella. So when I have some leftover cooked rice and a bag of fruits de merin the freezer, I often make this super-easy Cheat’s seafood paella. Sometimes I add chorizo and/or chicken to it too, but this simple version is meat-free and a bit more healthy. You can make it with various green veggies – kale, spinach, green bean, broad beans or peas work the best.

- Chop the onion, red pepper and garlic.
- Heat the oil in a large, heavy-based casserole dish. Add the onion and garlic and gently sauté for 5 minutes until soft. Add the paprika and turmeric, stir for 30 seconds, then add the tomato purée and coat.
- Add a cup of water or stock, and season with salt and pepper. Cook over high heat for 5 minutes. Add the seafood, bring to the boil, then add your chosen green vegetables. Cook for another 5 minutes or so – the sauce should be thick and silky. Stir in the rice and the chopped parsley. Warm through and serve.
