Stir-fried Mangetout and tofu

This super easy stir-fried mangetout and tofu is vegan and gluten-free so it’s ideal for most diets. It can be served as a main (with rice or noodles) on busy days or fits well in a Chinese-style menu. If you want it to have a kick, serve it with some chilli slices or dried chilli flakes.

Ingredients
  

  • ½ large onion
  • 2 cm ginger
  • 1 clove of garlic
  • 100 g firm tofu
  • 2 Tbsp vegetable or groundnut oil
  • 100 g mangetout
  • 1 Tbsp soy sauce
  • 1 Tbsp Shaoxing Rice Wine
  • 1 tsp sesame seeds
  • ½ tsp toasted sesame oil
  • 1 chilli optional

Method
 

  1. Dry the tofu and cut it into 2cm cubes.
  2. Peel and thinly slice the onion, ginger and garlic.
  3. Heat half of the oil in a wok. When it’s smokey, add the tofu and stir-fry for a couple of minutes, until light brown an all sides. Transfer them to a plate, lined with paper kitchen towels.
  4. Wipe out the wok and heat the rest of the oil. When it’s smokey, add the the onion & ginger and stir-fry for 3 minutes.
  5. Add the garlic, stir for a minute, then add the mangetout.
  6. Add the soy sauce, rice wine and sesame seeds. Stir-fry for a couple of minutes, then add the sesame oil and tofu cubes. Combine gently and serve hot, while it’s sizzling (with some slice chilli scattered on top, if liked).
