Easy seafood pasta
This super easy seafood pasta is exactly what it says on the tin – incredibly easy to make, as everything is cooked in one pot and it’s on the table within 15-20 minutes. It’s one of my favourite recipes for those days when I have little time to cook and hardly anything fresh in my fridge (I tend to make it with frozen seafood). Sometimes I add frozen peas or spinach too to make it a bit more wholesome. Also, I make it with different sorts of pasta – this time I had some gluten-free spaghetti to use up.

- Roughly chop the onion and garlic.
- Heat the oil in a large pan, add the onion and garlic and gently sauté for 5 minutes, until soft.
- Add the paprika, passata and stock. Bring to the boil, add the pasta and turn down the heat. Simmer for 7 mins.
- Add the mixed seafood (defrosted), and cook for 3-5 minutes until the pasta is cooked to your liking. Season to taste.
- Serve with chopped parsley sprinkled on top and lemon wedge on the side.
