Chocolate chip oat cookies

These cookies are really lovely with a cup of tea. They are not only quick and easy to make, but they can be made dairy-free if appropriate margarine & chocolate drops are used. Stored in an airtight container they remain fresh for at least a week!

Ingredients
  

  • 1 cup whole-wheat flour
  • 1 cup oats
  • 1 tsp baking powder
  • 1 pinch of salt
  • ½ ts ground cinnamon
  • 1 egg beaten
  • ½ cup soft butter or margarine
  • ½ cup light soft cane sugar
  • ¼ cup milk or oat-milk
  • ½ cup dark chocolate chips

Method
 

  1. Preheat oven to 180°C/350/f/Gas Mark 4. Line a large baking tray with baking paper.
  2. Mix the flour, oats, baking powder, salt, cinnamon in a large bowl.
  3. Cream the butter & sugar, then add eggs and milk, beat well.
  4. Combine the two mixtures. Add the chocolate bits and mix well.
  5. Drop spoonfuls of the batter onto the tray, leaving about 5 cm space between them, then squash them down a bit.
  6. Bake for 10-15 minutes, until golden brown.
  7. Allow the cookies to cool for a couple of minutes then move them to a wire rack to cool completely.
