Mashed potato fry

Mashed potato fry is popular recipe from the southern state of Andhra Pradesh. It is very easy to make and goes well with rice or roti.

Ingredients
  

  • 4 medium sized potatoes
  • 1 big onion finely chopped
  • ¼ tsp turmeric
  • 1 and ½ tsp red chilli powder
  • 1 Tbsp oil
  • ½ tsp split black gram
  • ¼ tsp mustard seeds
  • 1 sprig curry leaves
  • 1 green chilli split and cut
  • Salt to taste

Method
 

  1. Wash and cut the potatoes in half and pressure cook for 3-5 whistles or until cooked. Set aside to cool.
  2. Peal the skin of the potatoes and mash them in a bowl. Keep aside.
  3. Take a pan, on medium heat, add oil, black gram and mustard seeds.
  4. Once the mustard seeds start to sputter, add finely chopped onions, curry leaves and green chilli. Fry till golden brown.
  5. Add the mashed potatoes to the onions. Fry for 10 min.
  6. Add turmeric, red chilli powder and salt. Mix well and fry for 5 min.
  7. Serve hot with rice or roti.
