Vegan prune, walnut and oat cookies

These healthy vegan prune and oat cookies are my perfect snacks during the day as they’re really filling, yummy, full of nutrients and go well with my morning coffee or afternoon tea. They are free from gluten, sugar and dairy too!

Ingredients
  

  • 2 ripe bananas
  • 1 handful walnuts
  • ½ cup chopped prunes
  • 1 cup porridge oats gluten-free
  • 1 tsp cinnamon
  • 1 Tbsp ground flax seeds optional
  • 2 Tbsp rapeseed oil
  • ½ cup oat milk approx.

Method
 

  1. Pre-heat the oven to 180°Celsius°C. Line a baking tray with parchment paper.
  2. Puree the bananas in a food processor.
  3. Add the prunes, oats, flax seeds, cinnamon and the oil. Whiz for a few seconds. Add gradually the milk, pulse again for a few seconds then add more milk until you get a thick, textured batter.
  4. Form six or eight balls from the mixture, then flatten them slightly between your palms. Put the cookies on the baking tray and bake in the oven for about 20 minutes until golden.
  5. Transfer the cookies to a wire-rack and let them cool.
  6. Keep them in an airtight jar or tin.
