Baked Sea Bass with Rosemary and Garlic

- Preheat the oven to 200C. Make two or three deep cuts into one side of each bass.
- Season the fish cavities, also the slits into which you then stuff the garlic and rosemary.
- Rub the oil & more seasoning all over the fish and also put some on the bottom of a suitably sized roasting dish then put in the bass with the cut sides up.
- Cook for 20-25 minutes in the oven, then take out and allow to rest for five minutes before serving sprinkled with lemon, olive oil & sea salt
