Balsamic glazed lamb steak

This is a recipe you shouldsave in your binder. It’s perfect for a midweek quick & easy supper –  but it’s so tasty that it can be served at a dinner party too! It’s best to marinate it for a while, so it’s also the ideal main meat at a BBQ party. For supper serve it with salad and mash – at a BBQ, slice it up and put it in a bread roll or pita with some relishes.

Ingredients
  

  • 2 boneless lamb steaks shoulder or leg
  • 1 Tbsp chopped rosemary leaves
  • 2 Tbsp balsamic vinegar
  • 1 tsp olive oil
  • Sea salt and ground pepper

Method
 

  1. Mix the vinegar, oil and rosemary together then coat the lamb steaks evenly with it.
  2. If you have time, marinate for 30 minutes or more.
  3. Heat your barbecue or griddle pan.
  4. Season the steaks with salt immediately before cooking.
  5. Cook 5 minutes on each side depending on how well done you like lamb.
  6. Rest for a few minutes before serving.
