Blueberry and Lime Jam
This blueberry and lime jam is really quick and easy to make. It has much less sugar than shop-bought jam and needs no pectin. So you know precisely what’s in it and it’s really tasty! You’ll get three medium sized jars out of this recipe – they’ll keep well if yousterilize them properly, and they make a nice gift.

- Carefully wash the blueberries. Wash then collect the zest and juice of the limes.
- Put the blueberries, lime zest & juice and the sugar into a large heavy-based pot.
- Gradually bring to the boil, stirring gently but constantly with a wooden spoon, then reduce to a simmer. Cook for half an hour or so until it reaches setting point (see tip).
- Take off the heat and allow to to cool a little before sealing into sterilized jars.
