Chilli, garlic and lime squid

This chilli, garlic and lime squid is cooked in just 5 minutes so it’s perfect on busy days. Also, it can be served warm or cold –  so it’s ideal for picnics, trips, parties or as tapas/nibbles with a glass of wine.

Ingredients
  

  • 500 g cleaned squid
  • ½ Tbsp vegetable oil
  • 1 cm ginger
  • 1 clove of garlic
  • 1 chilli
  • 4 spring onions
  • juice of ½ lime
  • ½ tsp cane sugar
  • 1 Tbsp chopped coriander leaves

Method
 

  1. Wipe the squid with kitchen paper towel, then cut it into 1cm thick rings. Leave the tentacles whole (if there are any).
  2. Peel and chop the ginger & garlic. Cut the chilli in half, remove the seeds and vein, then chop the flesh. Slice the spring onion diagonally.
  3. Heat up the oil in a frying pan and cook the chilli, garlic and ginger for half a minute. Add the squid, fry for 1 minute while constantly stirring.
  4. Add the spring onion, sugar and lime juice, a little salt and pepper. Stir-fry for half a minute, scatter the coriander leaves on top and turn off the heat.
