Fig and feta salad

Fig and cheese are generally best mates but I’d never tried to combine figs with feta until just recently. This fig and feta salad only takes 5 minutes to throw together, and it’s really delicious, particularly as a tapa or starter with a glass of vino! You can use any type of lettuce – such as little gem, Romaine, curly endive or rocket – depending on how you want to serve it. I had it for lunch with crusty bread but it’s suitable as a snack anytime and perfect for parties!

Ingredients
  

  • 6 fresh fig
  • 1 handful of walnut halves
  • 50 g feta
  • 2 large handful of salad leaves
  • ½ tsp Dijon mustard
  • 1 tsp white wine vinegar
  • 2 Tbsp walnut oil
  • Salt and pepper

Method
 

  1. Roughly chop the walnuts then toast them in a non-stick frying pan s for 2 to 3 minutes. Set aside.
  2. Make the vinaigrette by whisking the two oils, vinegar and mustard together. Season to taste and set aside.
  3. Rinse and wipe the lettuce leaves, scatter them onto individual plates or a big platter.
  4. Rinse and wipe the figs, then cut them into wedges. Arrange them on top of the lettuce.
  5. Crumble the feta on top and scatter the walnuts all over.
  6. Just before serving, drizzle the vinaigrette over the salad.
