Gluten-free apple and walnut pancakes

Serve these gluten-free apple and walnut pancakes with honey or maple syrup and toasted walnuts. I used oat milk so they are dairy-free too, but feel free to make them with normal milk.

Ingredients
  

  • 1,5 cup gluten-free flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ cup walnuts
  • 1 green apple
  • 1 cup oat or normal milk
  • 2 eggs
  • 2 Tbsp unrefined cane sugar

Method
 

  1. Peel and grate the apple.
  2. Put everything in a blender, then process until smooth. Add the grated apple and 1 tsp of cooking oil, then whiz for a couple of seconds until you get a thick batter.
  3. Oil a pancake pan or a heavy based frying pan, then put it on the stove over medium heat. When hot, spoon the batter into the pan, creating circular shapes. Alternatively use silicon pancake mould.
  4. When the top of the pancakes are solid, flip them over and cook for another minute or so. Transfer them onto a plate.
  5. Make more pancakes, using up all the batter.
  6. Serve the pancakes warm with some honey or maple syrup drizzled on top.
