Halloumi, grape and cucumber salad

This halloumi, grape and cucumber salad is very easy to make – perfect for picnics, trips, parties or for your lunch-box. It’s also nice for a quick and light lunch or brunch, served with pita.

Ingredients
  

  • 1 package of halloumi cheese about 250g
  • 200 g red grapes
  • 2 Tbsp almond flakes
  • 1 handful mint leaves chopped
  • 1 cucumber
  • 1 tsp olive oil
  • Dressing:
  • 2 Tbsp lemon juice
  • 4 Tbsp olive oil
  • 2 tsp honey

Method
 

  1. Wash the grapes, cut hem in half.
  2. Cut the ends of the cucumber, cut it in half lengthwise, then scrape out the seeds. Chop the flesh into 2cm cubes. Add the mint.
  3. Put the grapes and cucumber pieces in a serving dish.
  4. Dry-fry the almond flakes in a frying pan, put them aside.
  5. Drain and cube the cheese.
  6. Heat the oil in a frying pan and cook the cheese on each side until golden.
  7. In a large bowl toss the grapes , cucumber and cheese cubes. Add the chopped mint.
  8. Mix the dressing and pour it over the salad. Just before serving, scatter the almond flakes on top and garnish with a few mint leaves.
