Healthy oat and banana cookies
These oat and banana cookies are really healthy and, unbelievable as it sounds, they’re gluten-free, sugar-free, dairy-free, egg-free and fat-free – yet absolutely delicious! In this version I’ve added some desiccated coconut and pumpkin seeds but you can add other seeds and nuts, dried fruits (such as raisins, cranberries), grated fresh fruits (such as apple or pear), berries, chocolate bits, cocoa powder, mixed spices, lemon zest or whatever else you fancy!

Method
- Mash the bananas with a fork or blend them in a blender.
- Add enough oats and the other ingredients to create a malleable dough. Let it rest until the oven warms up.
- Turn the oven on to 180°C.
- Line a baking tray with parchment paper.
- Make equal sized balls from the mixture and flatten these slightly between your palms.
- Put these on the baking tray and bake for about 10-15 minutes until golden brown. Let them cool on a wire-rack.
