Pineapple and oat slice

These pineapple and oat slices are not only easy to make – but healthy too. They are gluten-, dairy- and sugar-free yet naturally sweet and yummy. They are perfect snacks for kids – and nice treats for adults who like looking  after their health and waistline!

Ingredients
  

  • 2 ripe bananas
  • 4-5 slices of pineapple
  • 50 g rolled oats
  • 3 Tbsp desiccated coconut sugar-free
  • 3 Tbsp melted margarine or butter
  • 1 handful of raisins or dried cherries

Method
 

  1. Preheat the oven to 180°C. Grease, or line with baking parchment, a 20×20 cm baking tray.
  2. Blend the bananas together with the oil.
  3. Cut the pineapple into small pieces.
  4. In a large bowl mix everything together. If the mixture is too runny add some more oats.
  5. Transfer the mixture evenly into the baking tray. Bake for about 20 minutes until golden brown.
  6. Let it rest in the tray for 10 minutes, then turn onto a plate. When it’s completely cooled, slice it into cubes
