Background

If you like Spanish tortilla as tapas you’ll love this Chorizo and courgette frittata! It’s super easy to make - ready in 10 minutes. Perfect nibble to accompany a glass or two Cava or serve it with a salad for a quick and easy lunch/supper. Also, it’s ideal for picnics and trips.

Ingredients

4 eggs
100g cooking chorizo
1 courgette
Chopped parsley

Instructions

Lightly whisk the eggs. Cut the chorizo into small chunks and put these in a frying pan.
Gently heat the pan to allow the chorizo to release its fat.
Meanwhile coarsely grate the courgette into the egg mixture. Add the parsley and pour over the fried chorizo, letting the mixture spread out evenly.
Put a lid on , turn down the temperature and cook for about 6 minutes, until the surface is set. If you like it brown, put it under the grill for a minute (you can scatter some grated cheese or feta on the top before grilling ).
Let it cool slightly in the pan, then cut it into wedges or squares.
Serve at room temperature.
