Courgette omelette with ham
Background
This courgette omelette with ham is super easy and quick to make -Β you can serve it within 10 minutes. If dairy is not an issue for you, add some grated cheese to it, just before folding the omelette in half. Serve it with a crispy salad and crusty bread on the side. Perfect for breakfast or brunch!
Ingredients
- 3 medium eggs
- Β½ courgette
- 2 pinches of salt
- 1 slice of cooked/roasted ham
- 2 spring onions
- 1 Tbsp olive oil
Instructions
- Finely grate the courgette.
- Lightly beat the eggs with the salt, then mix in the grated courgette.
- Thinly slice the spring onion and add to the mixture.
- Heat the oil in a frying pan. When hot, pour in the egg mixture and let it spread out evenly.
- Cook over a low heat until the surface of the egg is no longer runny. Put the ham on one half, then carefully turn over the other half, using a spatula. Press the halves together and cook for a minute or so, then slide it onto a plate.
- Cut it in half, then serve with salad.
