Background

Tzatziki is normally made with cucumber, but if you have some courgette to use up, why don't you try something different? This courgette tzatziki is ready in just 5 minutes - perfect sauce for greek-style meatballs, falafels, burgers, wraps or as a dip with crudités.

Ingredients

½ small courgette
1 garlic clove, minced
1 handful of mint
1 tsp olive oil
5-6 Tbsp Greek yoghurt
juice of 1 lemon
Pinch of salt

Instructions

Finely grate the courgette.
Finely chop the mint.
Mix everything together in a bowl - but only add juice of ½ lemon, then more if needed.
Garnish with mint leaves and a pinch of paprika or ground pepper.
