Grilled squid with garlic & parsley
Background
When you have your grill/BBQ going it’s always useful to make little appetizers or snacks & meal components for the following days. For example I always grill a whole garlic, several red bell peppers and chillies - as these keep well in a jar and are perfect for other meals. Recently I realised that grilled squid is also an excellent ingredient - you don’t even have to marinate it, just bung it on the barbie and 5 minutes later they’re done. Then dress them with some sauce or vinaigrette et voilà, you have some delicious nibbles or you can use them for pasta dishes, salads, sandwiches and so on. Try this super easy squid with garlic & parsley dressing - you can add a chilli (deseeded & finely chopped) and/or a few capers to the sauce if you like.
Ingredients
- 8squids, cleaned
- 1 handful of parsley leaves
- 1 lemon
- 1 garlic
- Olive oil
Instructions
- Slit the squid tubes on one side. Remove the tentacles into a small bowl. Open up and place the squid flat onto a chopping board then lightly score them. Season with salt and pepper and rub them with olive oil. Squeeze a drop of lemon juice on top.
- Preheat a barbecue or a ridged griddle pan.
- Chop the parsley, zest & juice the lemon and chop the garlic. Put all in a mortar and grind it into a paste with the pestle, adding some olive oil gradually. The sauce should be textured and a bit oily. Season with salt and pepper. Set aside.
- Cook the squid for 2-3 minutes on each side, then put them in a serving dish. Pour over most of the paste immediately and toss. Use the remaining sauce to marinate the tentacles, which you can fry in a drying/griddle pan (or BBQ in a aluminium tray).
- Serve warm, room temperature or cold. Chill, if you want to serve it later.
