Background
I make this mixed bean salad regularly, as it’s ready in just 5 minutes. Prefect for vegans, the health-conscious and for parties & picnics. It can be served as a side dish too - goes particularly well with grilled fish and meat. You can use ready-mixed tinned beans, or combine two cans of your favourite beans - such as kidney and borlotti beans.
Ingredients
- 2 tins of mixed beans
- 2 sticks of celery
- 5 spring onions
- For the dressing:
- 4 Tbsp olive oil
- 2 Tbsp cider vinegar
- 3 Tbsp chopped coriander
- Salt & pepper
- 1 garlic clove, minced
Instructions
- Rinse and drain the beans, then transfer them to a large bowl.
- Thinly slice the celery and spring onion, add these to the beans. Add the minced garlic.
- Mix the dressing then pour over the bean salad. Combine well.
- If you have time, rest it for an hour or so to allow the flavours to infuse.
- Taste before serving and adjust the seasoning to your liking.
