Peas with Little Gem and Mint

Background

This recipe combining peas with little gem and mint is really easy to make - it takes only 5 minutes! It's a lovely, healthy side dish that goes particularly well with roast lamb or grilled lamb chops.

Ingredients

1 Tbsp olive oil
5 spring onions
100 ml vegetable stock
1 little gem or baby romaine lettuce
250g green peas
1 Tbsp chopped mint leaves

Instructions

Chop the spring onion crosswise.
Heat the oil in a saucepan, cook the onion for a couple of minutes until soft. Add the vegetable stock and the peas. Cook for about 3 minutes until soft.
Meanwhile, chop the mint leaves. Cut the little gem lengthwise into 4 wedges.
Add the lettuce wedges and mint to the peas then stir through
Serve warm.
