Background
Rizi-bizi is a very popular Eastern-European side dish, particularly loved by children. It's a cross between the Italian Risi e Bisi and pea risotto. While the risotto is usually eaten as a first or main course, Rizi-bizi is a side dish served with fried meat, meat-balls or stew. This Hungarian version is very easy to make, in fact it's an ideal way to use up leftover cooked rice.
Ingredients
- 1 cup rice (or 200g)
- 200g green peas
- 50g butter or dairy free margarine
- 2-3 Tbsp chopped parsley
- Salt and pepper
- 1 small onion (optional)
- Grated cheese (optional)
Instructions
- Cook the rice according to the instructions on the packaging or follow our cooking method.
- Sauté the peas in the butter for 2-3 minutes (under cover), then add the chopped parsley and simmer for a couple of minutes more. Season to taste. Stir in the rice.
- Serve hot with your main course.
Tips
- You can add the onion to the cooking water of the rice, or chop it up and sauté it with the peas.
- You can stir in some grated cheese at the end if you like it to taste a bit like a risotto.
- Some people cook the rice it in chicken or vegetable stock - not in water.
