Background

This sautéed courgette and runner beans is a super easy dish - perfect on a piece of sourdough or as on the side of grilled meat and fish. I used ready-sliced runner beans, but you can do this yourself with a bean slicer.

Ingredients

1 medium courgette
2 cloves of garlic
4 spring onions
150g sliced runner beans
1 Tbsp olive oil
1 Tbsp soy sauce
1 Tbsp rice vinegar
2 tsp sesame seeds

Instructions

Thinly slice the courgette.
Finely chop the garlic and spring onion.
Heat the oil in a frying pan then fry the courgette and garlic for 3 minutes.
Add the runner beans, spring onions, soy sauce, rice vinegar and sauté for 3-5 minutes under cover.
Add the sesame seeds and serve.
