Background
I always stand amazed and amused in front of the deli counters at the supermarket looking at the olives' prices ! They charge a fortune for a pot of marinated olives – which can be made so easily at home using standard, cheap an cheerful olives in brine, sold in large jars. The recipe of these zesty green olives is a good example - ready in just 5 minutes - they are perfect nibbles and can save you a fortune!
Ingredients
- 2 cloves garlic
- 2 sprigs of rosemary
- 1 lemon
- 2 Tbsp extra-virgin olive oil
- Big pinch dried red pepper flakes (optional)
- 150g green, pitted olives (in brine) 1 bay leaf
- 1 bay leaf
Instructions
- Peel and cut the garlic in half lengthwise. Finely chop the rosemary. Zest and juice the lemon.
- Mix these well then add the drained olives and oil. Season with salt and pepper. Add the bay leaf and chilli flakes if used. Combine well.
- Chill for at least an hour if you can, preferably overnight.
- Alternatively transfer to a sterilised jar, seal well and refrigerate - this should keep for a couple of weeks.
