Strawberry and Almond Oat Squares
These strawberry and almond oat squares are a simple, wholesome bake that’s naturally vegan, dairy-free and free from added sugar. Made with oats, fruit and nuts, they’re high in fibre and perfect for a nourishing breakfast or an easy grab-and-go snack. Soft, lightly sweet and full of fruity flavour, they’re great for afternoon tea, picnics or even as a healthier treat for gatherings. You can make them with gluten-free oats if needed, and they work just as well baked in an air fryer.

- Preheat the oven to 180°C and line a baking tin with parchment paper.
- In a bowl, mash the bananas and strawberries together with a fork until mostly smooth.
- Add the almond butter and vanilla extract, then mix well.
- Stir in the oats and ground almonds until fully combined. The mixture should be soft but not too wet—add a little more oats if needed, or a splash of almond milk if it feels too thick.
- Let the mixture rest for a few minutes to allow the oats to absorb some moisture.
- Transfer the mixture to the prepared tin and spread it out evenly.
- Bake in the oven (or air fryer) for about 20 minutes, until lightly golden and set.
- Allow to cool on a wire rack before cutting into squares.
- Serve as they are, or with a spoonful of Greek yogurt and fresh fruit.
