Spicy black bean burger

This Mexican-style spicy black bean burger is really rather spicy, so if you don’t like the heat leave out the chilli powder or jalapeño. Vegans can substitute the egg with one  portion of flax-egg, the breadcrumbs can be gluten-free, if needed. Serve the patties wrapped in tortilla or tucked in flatbread with salsa, salad and condiments of your choice.

Ingredients
  

  • 1 teaspoon olive oil
  • 4 spring onions
  • 1 green chilli jalapeno
  • 2 of cloves garlic
  • 1 handful of coriander leaves
  • 1 tin of black beans 400 ml
  • 1 egg slightly beaten
  • ½ cup breadcrumbs
  • ½ teaspoon chilli powder
  • ½ teaspoon ground cumin
  • Salt& pepper

Method
 

  1. Finely chop the spring onions. Deseed and chop the chilli. Peel and chop the garlic
  2. Fry the chopped vegetables in hot oil until softened, then put them into a small food processor and cool for a couple of minutes. Add the coriander and blend into a rough paste.
  3. Add the drained beans, and whiz for a few seconds -don’t blend it into a mash, the mixture should remain textured.
  4. Transfer the mixture into a mixing bowl, add the other ingredients and combine with a wooden spoon or your hands. Shape 4 balls, then press them between your palms.
  5. Heat a little oil in a frying pan. When hot, fry the patties on both sides until brown. It should take about 5 minutes.
  6. Serve them warm in flatbread or tortilla with salad and condiments of your choice.
