Ingredients

  • 150 ml plant-based double cream
  • 150 g dairy free cream cheese alternative
  • 3 Tbsp Amaretto
  • 1 Tbsp Stevia or 2 Tbsp icing sugar
  • 1/2 tsp Vanilla essence
  • 150 ml strong espresso
  • About 12 Lady fingers Savoiardi
  • Good quality Cocoa powder

Method

  1. Whisk the plant-based cream, “cream cheese”, 2 Tbsp Amaretto, vanilla and sugar/Stevia until you get a thick, smooth cream.
  2. Pour the coffee into a shallow dish. Add the Amaretto, then dip in the lady fingers, each at a time, for a couple of seconds, then turn them over to soak on the other side. Make sure they are not soggy. Put them tightly next to each other in a deep serving dish, then spread half of the cream mixture on top.
  3. Repeat the layering once more, then cover the dish and put it in the fridge.
  4. Chill for a couple of hours (or overnight).
  5. Just before serving, dust some cocoa powder on the top, enough to cover the cream well.
