Ingredients
  

  • 1 tsp vegetable oil
  • 1 onion
  • 1 garlic clove
  • 1 Tbsp soy sauce
  • 200 ml vegetable stock
  • 100 g edamame beans
  • 1 cup shredded kale or cavolo nero
  • 1 tsp miso paste
  • Juice of 1 lime
  • Coriander leaves
  • Sesame seeds optional
  • Chilli flakes optional

Method
 

  1. Slice the onion and chop the garlic.
  2. Heat the oil in a saucepan and gently sauté the onion for 5 minutes, then add the garlic and a pinch of chilli flakes (if used) and stir for a minute.
  3. Add the stock and soy sauce, then the beans. Bring to the boil and cook for 3 minutes.
  4. Add the kale and cook for another 3-5 minutes.
  5. Mix the miso with a large spoonful of the stew liquid, then pour it in the pan. Turn off the heat and stir in the lime juice and coriander leaves.
  6. Serve warm with sesames seeds scattered on top.
