Vegan apple, blueberry and almond crumble
Crumble is one of the desserts that can easily made vegan and gluten-free. This vegan apple, blueberry and almond crumble is baked with dairy-free spread and gluten-free oats. I served it with Alpro blueberry yoghurt, but any plant-based custard or vanilla ice-cream would go well with it too.

- Preheat the oven to 180°C.
- Peel and core the apples, then chop them into small pieces. Scatter them into 4 ramekins or in one oven-proof dish. Squeeze a drop of lemon juice on top, then add the blueberries (divided equally). Dust each with one teaspoon of sugar (or 2 Tbsp if you’re using one dish).
- In a bowl, rub the margarine/spread with the oats, cinnamon and ground almond until you get lumpy, sticky crumble, then add the remaining sugar and combine. Add more margarine if it’s too dry.
- Cover the apple & blueberry with the crumble, slightly pressing it down with a spoon. You can garnish it with some almonds, if you like.
- Bake for about 20 minutes until golden and crispy.
- Serve warm.
