Potato and frankfurter bake

This potato and frankfurter bake is ideal for an easy family meal. You can use leftovers – such as boiled potatoes, or pasta sauce. It is gluten-free, dairy-free, egg-free and nut-free too. If dairy is not an issue for, you can add some grated cheese as the top layer. Serve it with gherkins or a mixed green salad.

Ingredients

  • 6 potatoes
  • 1 clove of garlic
  • Olive oil
  • 8 frankfurters
  • 1 cup green beans or peas
  • 1 handful olives
  • 2 cups ready-made or leftover tomato sauce with herbs

  6. Chill until you’re ready to bake.
  7. Preheat the oven for 180°C then bake for about 25 minutes or until the top is golden.
  8. Serve warm.
