Vegan carrot and oat mini loafs
These vegan carrot and oat mini loafs are healthy, sugar-free, oil-free and can easily be gluten-free if appropriate oats and flour are uses. They are very easy to make, perfect with morning coffee or afternoon tea – or take them to picnics, parties and so on.

- Line 4 mini loaf tins with parchment paper or prepare 4 small silicon moulds.
- Mash the bananas in large a large mixing bowl, then add the oats, carrots, flour, cinnamon and milk.
- Rest for 10 minutes.
- Preheat the oven to 180°C.
- Add the raisins and chopped nuts to the mixture and mix well.
- Tip the batter into the prepared tins. Put them on a tray , then bake in the middle of the oven for 25-30 minutes, until golden brown and an inserted skewer comes out clean.
- Remove the tins from the oven, let them cool for 5 minutes, then transfer the loafs to a wire-rack to cool completely.
- You can drizzle it with date syrup, maple syrup or vegan cream cheese.
