Mixed berry pancakes

These mixed berry pancakes are scrumptious yet so easy to make! You can use mixed berries or fruits of the forest or your own mixture of berries.  It’s a perfect dessert for pancake day, Valentine’s day, Mother’s day and anniversaries. For a more luxurious version add some whipped cream or syllabub.

Ingredients
  

  • 1 cup self-raising flour
  • 1 egg
  • 1 cup milk or plant-based milk
  • 1 tsp vanilla essence
  • 1 tsp sunflower oil
  • 1 cup mixed berries
  • For the compote:
  • 200 g frozen mixed berries
  • 1 Tbsp vanilla essence or 1 tsp vanilla paste
  • 2 Tbsp muscovado sugar

Method
 

  1. Put the flour in a large bowl and add the egg and milk. Stir until well combined then rest for 10-15 minutes, if time allows.
  2. Lightly oil a non-stick frying pan over medium heat. Add dollops of the batter to the pan then sprinkle them with mixed berries. Spoon a little more batter on top to cover the berries. Cook for a minute until the surface is no longer runny, then flip them over and cook for another minute or so.
  3. When they are golden on both sides, transfer them to a plate and cover with foil. Repeat with remaining batter and mixed berries.
  4. Meanwhile, put most of the berries in a small saucepan. Add the vanilla paste and sugar then place the saucepan on the hob over low heat and cook for about 8 minutes, stirring regularly, until you get a thick, syrupy compote.
  5. Serve the pancakes with the compote drizzled over them.
