Bagel with egg and black beans salsa

This bagel with egg and black beans salsa is perfect for a weekend breakfast or brunch. If you like, you can make the salsa the night before, but add the avocado and herbs just before serving. As to the eggs, you can cook them your preferred way – scramble, fry or poach. I made the dish with fried eggs.

Ingredients
  

  • 2 bagels
  • 2 eggs
  • For the black beans salsa:
  • 1 tin black beans drained
  • 1 shallot or ½ red onion
  • ½ red bell pepper
  • 1 avocado
  • 1 handful of tomatoes
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • Salt& pepper
  • 1 pinch of cayenne
  • Juice of 1 lime
  • 2 Tbsp chopped coriander or parsley leaves
  • 2 Tbsp olive oil

Method
 

  1. First, make the salsa.
  2. Drain the beans and scatter them into a mixing bowl.
  3. Chop the shallot and red pepper, and add to the beans.
  4. Halve or quarter the tomatoes, then add to the beans.
  5. Peel, then dice the avocado and add to the beans.
  6. Add the spices, oil and lime juice then toss gently. Taste and adjust the seasoning and heat to your liking. Stir in the chopped herbs. Set aside.
  7. Cook the eggs according to your liking – you can poach them, fry them or scramble them.
  8. While the eggs are cooking, cut the bagels in half (horizontally), then toast them lightly.
  9. Put the bagels on two plates then add the bean salad. Place the egg on top and serve immediately.
